Couscous with Arugula
(makes 8 servings)
| 3 | cups (720 ml) fat-free, no salt added canned chicken broth |
| 2 | cups (368 g) couscous |
| 4 | ounces (120 g) fresh arugula leaves, trimmed |
| 1 | tablespoon (15 ml) olive oil |
| freshly ground pepper |
- In a large saucepan, bring chicken broth to a boil. Stir in couscous and arugula. Cover and remove from heat. Let stand 5 minutes.
- Fluff with a fork and stir in olive oil and pepper. Serve at once.
