Snacking Granola
(makes 24 1/3-cup serving)

refrigerated butter-flavored cooking spray

cup unsweetened coconut

tablespoons dry-roasted sunflower seeds

tablespoons reduced-fat margarine
|

tablespoons light brown sugar

teaspoons ground cinnamon

cup slivered almonds, toasted

cup diced dried mixed fruit
|
- Preheat oven to 300°F. Lightly coat a large baking pan with cooking spray.
- Combine oats, wheat germ, coconut, and sunflower seeds.
- Melt margarine in a small saucepan and stir in brown sugar and cinnamon. Stir until sugar
dissolves. Pour over oat mixture and stir in almonds. Spread mixture over the bottom of the
prepared pan and bake, stirring frequently, for 20 to 25 minutes, until golden brown.
- Remove from oven and let cool. Stir in dried fruit and store in jar with tight-fitting
lid until ready to serve.
