Fresh Garden Salad

(makes 4 servings)

1 quart (1 l) fresh garden lettuces (we like a combination of radicchio, arugula, bibb, and oakleaf)
2 tablespoons (30 ml) fresh lemon juice
1 tablespoon (15 ml) hazelnut or olive oil
1 teaspoon (5 ml) Dijon mustard
1 tablespoon (15 ml) minced fresh herbs (combination of basil, chives, mint, and thyme)
  1. Combine the lettuces in a serving bowl.
  2. In a small bowl, whisk together remaining ingredients. Drizzle over greens and toss to coat evenly right before serving. Makes 4 servings.
