Cream Cheese Frosting
| 2 | 6-ounce (180 g) packages low-fat cream cheese |
| reserved pineapple juice from cake |
| 5 | tablespoons (38 g) confectioners' sugar |
| 2 | teaspoons (10 ml) vanilla extract |
- In a food process or blender, or using an electric mixer and a bowl, combine all ingredients and process or beat until smooth.
- Spoon into a serving bowl to offer alongside the cake. Makes about 2 cups.
