Mesclun Salad

(serves 12)

1 pound mesclun (480 g) or baby salad greens, rinsed and crisped
1/4 cup (15 g) chopped fresh herbs of your choice
3 tablespoons (45 ml) olive oil
2 tablespoons (30 ml) water
3 tablespoons (45 ml) white wine vinegar
freshly ground pepper
1/4 teaspoon salt (optional)
  1. Place the mesclun in a large salad bowl.
  2. In a small bowl combine the remaining ingredients. Toss with salad and serve immediately.
Per serving: 37 calories (80% calories from fat), 1 g protein, 4 g total fat (0.5 g saturated fat), 1 g carbohydrates, 1 g dietary fiber, 0 cholesterol, 10 mg sodium
