Watermelon Salsa
(makes 4 servings)
| 1 1/2 | cups (240 g) diced seedless watermelon |
| 1/2 | cup (80 g) diced seeded cantaloupe |
| 3 | scallions, white part and 1 inch (2.5 cm) |
| 1/4 | cup (12 g) chopped fresh mint |
| 2 | tablespoons (20 g) finely minced fresh ginger |
| 1 | serrano chile pepper, seeded and finely minced |
| 1/4 | cup (60 ml) fresh lime juice |
| 2 | tablespoons (19 g) crumbled low fat feta cheese |
- In a covered dish, combine all ingredients except feta cheese. Cover and chill until ready to serve.
- Transfer to a serving dish and sprinkle with feta cheese. Serve to spoon alongside chicken.
