Cantaloupe Granita
(makes 6 serving)
| 2 | cantaloupes |
| 1/4 | cup (60 ml) fresh lime or lemon juice |
- Seed and peel the melons and cut into chunks. Whirl enough of the fruit in a food processor fitted with a metal blade or in a blender to make 3 cups. Add the lime or lemon juice. Pour into a shallow metal pan and freeze.
- Allow to sit at room temperature until you can break it up with a wooden spoon. Transfer to a bowl and beat until slushy. Cover and refreeze.
- To serve, soften at room temperature for 5 minutes and scoop into dessert cups or glasses.
