Romaine with Creamy Herb Dressing
(makes 4 servings)
| 1 | small head of romaine lettuce, washed, crisped, and chopped |
| 3 | tablespoon (45 g) low-fat plain yogurt |
| 2 | tablespoons (30 ml) white wine vinegar |
| 1 | tablespoon (15 ml) olive oil |
| 1 | teaspoon (5 ml) Dijon mustard |
| 1/2 | teaspoon (2.5 ml) crushed dried oregano |
| 1/2 | teaspoon (2.5 ml) crushed dried thyme |
| 1 | tablespoon (5 ml) chopped fresh parsley |
- Arrange equal portions of chopped romaine on each of 4 salad plates.
- In a small bowl, whisk together remaining ingredients. Drizzle the mixture over the romaine and serve.
