Minted Tossed salad with Mint

(makes 4 servings)

1 clove garlic, sliced in half
6 cups mesclun (340 g) , or other lettuce of your choice
1 cup (60 g) fresh mint leaves torn into brie size pieces
1 tablespoon (15 ml) chopped chives
Vinaigrette
1 1/2 tablespoons (22.5 ml) white wine vinegar
1 1/2 tablespoons (22.5 ml) olive oil
1 1/2 tablespoons (22.5 ml) water
freshly ground pepper
1/8 teaspoon (0.6 ml) salt (optional)
  1. Rub the inside of a wooden salad bowl with the garlic.
  2. Place the greens, mint, and chives in the bowl
  3. Combine all ingredients for the vinaigrette and sprinkle on the salad. Toss well and serve immediately.
Per serving: 72 calories (63% calories from fat), 2 g protein, 5 g total fat (0.8 g saturated fat), 5 g carbohydrates, 3 g dietary fiber, 0 cholesterol, 28 mg sodium
