Strawberries and Yogurt

(makes 4 servings)

1 1/2 cups (342 g) nonfat plain yogurt
1 tablespoon honey
1 teaspoon vanilla extract
2 cups (378 g) sliced fresh strawberries
4 sprigs fresh mint for garnish (optional)
  1. In a bowl, combine yogurt, honey, and vanilla extract. Fold in strawberries.
  2. Spoon equal amount of the yogurt-strawberry mixture into 4 dessert dishes. Garnish with mint sprigs (if using). Chill until ready to serve.
Per serving: 95 calories (6% calories from fat), 6 g protein, 1 g total fat (0.1 g saturated fat), 17 g carbohydrates, 2 g dietary fiber, 2 mg cholesterol, 376 mg potassium, 71 mg sodium
