Mango Ice Cream Sodas

(makes 4 servings)

1 large fresh mango, peeled, pitted and flesh cut into chunks
4 1/2-cup (120 ml) scoops fat-free, no-sugar-added vanilla ice cream
club soda or plain seltzer
  1. Place mango in a food processor and pulse to form a smooth puree.
  2. Divide mango puree between 4 tall 12-ounce (360 ml) glasses. Add a scoop of ice cream to each glass.
  3. Fill the glass with club soda. Add a straw and serve.
