Gelato with Pistachios
(makes 4 servings)
| 2 | cups (352 g) fat-free, no sugar added vanilla ice cream |
| 1/3 | cup (60 g) pistachio nuts, shelled and chopped, 1 tablespoon (9.5 g) reserved |
- Remove ice cream from the freezer for 10 minutes to allow it to soften. Stir in the chopped pistachios.
- Refreeze or divide into 4 dessert cups. Sprinkle with reserved nuts and serve at once.

Note: Use natural pistachio nuts, not the red dyed nuts sold in small packages. The end product will be better and you won't have bright pink fingers.
