Shrimp Heroes

(makes 4 servings)

1pound cooked shrimp (if large, cut into bite size pieces)
1/2cup (60 g) finely diced celery
1/4cup (40 g) finely minced red onion
1/3cup (85 g) fat free mayonnaise
1tablespoon (4 g) minced fresh tarragon or 1 teaspoon (5 ml) crushed dried
4hero rolls
1cup (108 g) shredded lettuce
2medium tomatoes, thinly sliced
1medium green bell pepper, seeded and thinly sliced crosswise into rings

  1. In a large bowl, combine shrimp, celery, red onion, mayonnaise, and tarragon. Mix well.
  2. Cut a lengthwise V-shaped section out of the top of the hero roll and set aside. Line the bottom of the roll with some of the shredded lettuce, tomato slices, and bell pepper slices. Top each with 1/4 of the shrimp mixture. Replace the top of the roll and cut the sandwich in half.
  3. Serve immediately.
Per serving:356 (16% calories from fat), 32 g protein, 6 g total ft (2.9 g saturated fat), 42 g carbohydrates, 4 g dietary fiber, 221 mg cholesterol, 759 mg sodium
